Vegan Chai-Spiced Muffin | Recipe

My very first try at baking was a direct attempt to relive my childhood memories. Today I’m a lot more conscious about the importance and ease of eating natural foods, so I try, as much as possible, to add whole foods to my baking recipes. I never thought this kind-of-new skill would be especially useful during this quarantine. I made these chai muffins because I was craving the flavor and it immediately made myself and my social distancing partners very happy.

It was such a hit that I’m sharing the recipe here even without much planning – hence the phone photos directly from my stories! They are vegan (but no one would know), very fluffy, light, warm and cozy. I always take artistic liberty when following recipes, I encourage you guys to do the same. Enjoy!

Recipe type: sweets, muffin

Ingredients:

  • 1 tbsp chia seeds (I blend it in the food processor to turn into a flour)
  • 5 tbsp (90ml) water
  • 1/3 cup  plant-based milk
  • 1 tbsp  white vinegar
  • 1/2 cup grape seed oil
  • 1/2 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1/4 cup cane sugar
  • 2 tbsp maple syrup
  • 1 cup all-purpose flour
  • 3/4 cup whole whear flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp (5ml)  vanilla extract
  • Pinch of salt
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground clover
  • 1/2 tsp nutmeg
  • 1/4 tsp coriander

Directions:

  1. Preheat the oven to 190C (375F) and lightly grease a muffin tray.
  2. In a large bowl, mix together the chia seeds and water. Let it sit for 5 minutes until it gels.
  3. Add the plant-based milk and vinegar, letting it sit for another 5 minutes.
  4. To the mix, add the oil, applesauce, maple syrup, vanilla and combine.
  5. Using a sifter or strainer, add the baking soda, baking powder, salt, flours, and spices. Lightly mix it until combined.
  6. Fill each muffin tray halfway.
  7. Cook until the top is golden; about 18-20 minutes and a toothpick comes out clean.
